Butter Salted anchovies and potato terrine with salted butter


Waiting to finish writing the long post on Culinary Workshops now (and it was now) I leave you a quick recipe (apart from cleaning the anchovies, you will!) To prepare but very tasty thanks to the product in secret: Salted Butter 1889 of Fiandino Farms.
I discovered that the butter goes perfectly with anchovies dish that gives the special flavor that makes the difference.

Serves 2
200 grams of anchovies already clean (so compratene at least 300 grams) 2 medium potatoes

freshly ground white pepper, pink and green
1 bunch of parsley

breadcrumbs to taste extra virgin olive oil salt

Preparation:
Wash the anchovies and clean it this way:
1. severed his head and entrails: take the breath test with the thumb and index finger and with his other hand holding the body.
2.Tirate head down with a sharp: in this way, eliminated both the head and entrails.
3. We open the book and remove the fillets to the central bone by pulling it down.
4. Wash the anchovies under cold running water, removing the drain plugs side anchovies clean paper towel.
After cleaning for good anchovies (which is the most expensive part of this recipe) the the rest is very quick to prepare.

Take two small baking dish, or even a large, pour a little olive oil and bread crumbs, then do a layer of potatoes cut into very thin slices (use a mandolin), salt lightly (because anchovies are salted and then put a little butter) and go forward now with a layer of anchovies, chopped sprinkle with coarsely ground pepper and mix with chopped parsley. Continue with another layer of potatoes and another of anchovies. Finally, the center of the bowl, put a small knob of salted butter. Pour a little oil and bake at 180 ° C for 20 minutes.
Butter will give a special flavor to this dish very tasty.
